Casa alle Vacche's Vin Santo is a meditation wine, produced using ancient and slow methods. The grapes are naturally dried, then vinified and left to age for years in small barrels. The result: an enveloping, deep, and moving nectar.
Tasting Notes
Antique golden yellow color with amber reflections. The nose is typical and complex, with notes of ripe grapes, candied fruit, toasted almond, and sweet spices. On the palate, it is warm, robust, full-bodied, with well-balanced sweetness and an enveloping aromatic persistence.
Food Pairings
Almond cantuccini, dry pastries, fruit cakes, blue cheeses. Excellent on its own, after dinner or as a meditation wine.

- Vinification: The grapes are harvested after slight over-ripening of selected bunches and dried on reed mats for 2 months. After careful sorting, they are pressed; the dense must obtained is fermented in small, unsealed wooden barrels and sealed for at least 4/5 years
