Casa alle Vacche is much more than a winery: it’s a historic farm where wine production has been an integral part of daily life for generations.
In the heart of Tuscany, just a few kilometers from San Gimignano, we cultivate 25 hectares of vineyards and 3 hectares of olive groves using sustainable methods and transitioning to organic farming. Every decision in the vineyard and cellar is guided by our desire to express, through our wines, the identity of the territory and our family’s work.

Our Wines
Every wine produced at Casa alle Vacche carries the character, soul, and care of a family that lives the vineyard as part of its history.
Our vision stems from a deep connection with the land, cultivated with respect and attention, and from knowledge passed down through generations.
From grape selection to vinification, each phase is followed with artisanal rigor. In recent years, we have chosen to deepen our study of native grape varieties, recovering ancient varieties and integrating them with modern winemaking technologies. It’s a journey that takes us back to the roots of Tuscan tradition, interpreting it with awareness and precision.

Our Extra Virgin Olive Oil
Alongside wine production, olive oil has always been an integral part of Casa alle Vacche’s agricultural identity.
We hand-harvest olives from over a thousand trees of Tuscan cultivars – Leccino, Frantoio, and Moraiolo – and take them to the mill within 24 hours to preserve their freshness and organoleptic properties.
The result is a first cold-pressed extra virgin olive oil with very low acidity, herbaceous aromas, notes of artichoke and thistle, and a balanced, full-bodied, never aggressive taste.
Perfect for Tuscan cuisine and ideal when used raw, our oil represents the authenticity and simplicity of a family production focused on quality and respect for the territory.
