Cinabro is Casa alle Vacche's Chianti Riserva, produced only in the best vintages using the most mature and selected grapes. It's an important, structured wine with a complex and deep profile, designed for those who love the most intense and bold Tuscany.
Tasting Notes
Visually, it's deep ruby red. The bouquet is complex and rich: ripe black fruit, cassis, vanilla, sweet spices, and a touch of cocoa. On the palate, it's dry, austere, warm, with a significant structure. Bold yet well-integrated tannins, with a long and savory finish.
Food Pairings
Grilled red meats, game, braised meats, stews, aged and spicy cheeses. Excellent on its own, as a meditation wine.

- Training system: Guyot and low spurred cordon. Total grass cover, green pruning, careful manual selection of the best exposed and ripest clusters.
- Harvest: Manual, with grape selection
- Vinification: Traditional red wine fermentation for at least 20 days with temperature control at 30°C. After the first racking, aging in barrique on fine lees and wood aging for at least 18 months
- Aging: Minimum 4 months bottle aging.
